In the celebration month of love, i will be sharing with you all one of my favorite Nigerian dish which is pepper soup with boiled unripe plantain or boiled yam.

Nigeria has one of most delicious traditonal food ever and please don’t argue with me . Pepper soup is one of the most traditonal and very medicinal dish and i love it.

Nigerian pepper soup contains medicinal herbs and spice. I love how i feel when i take pepper soup and my stomach does this happy flushing dance. Pepper soup can be made with fish, asorted meat, goat meat and lots of goodies. I actually prefers fish because i think for like 3 years now, I’m starting to love fish more than anything else.

So let’s get this dish on the go.

NIGERIAN PEPPER SOUP RECIPE

Ingredients

1 kg assorted meat, fish or sea foods
2 tbsp Pepper soup spice mix
1 tbsp vegetable oil
Salt start with a teaspoon and adjust to taste
Seasoning I used 2 Nigerian Knorr cubes
Water about 1 litre (4 to 5 cups)
11/2 medium size Onions chopped or sliced
2-3 cloves garlic sliced
Cayenne pepper use according to preference
handful Scent leaves substitute with dried or fresh basil

Instructions

Wash assorted meat/fish/seafood thoroughly to get rid of unwanted bits.

If you are using the lungs and liver, I’ll advise you parboil for about 6 minutes before adding to the rest of the meat or simply cut the meat to cube size to allow easy access when washing to get rid of the clotted blood. Rinse clean and continue with the cooking process.

Place pan containing washed assorted meat on medium heat add, chopped onions, garlic, salt, seasoning, half of the pepper soup spice, add enough water to cover the meat and bring to boil for about 15 minutes Add the remaining pepper soup spice and vegetable oil and reduce the heat. Also, check for salt and seasoning.

Add more water to the broth is needed. After about 10 minutes, add a handful of scent leaves or basil. I used a combination of dried and fresh basil Bring to boil till meat is tender.

If you are using unripe plantain or yam as side, you will boil the yam or plantain after thorough washing by adding it inside the broth so the spice can penetrate inside. If you are using fish, i advice once the fish is perfectly cooked, removed it from the broth so it won’t scatter.

Serve with red oil and dig in..
